Ive been very happy with this, my Kamado and my Pit Boss, they are all different but great cookers. Im building a drum this summer and hopefully a block pit too....trying to have fun this year and not do too much catering

Thank you, it was in and around 270 all night, the first load was cherry and apple chunks with Pecan Charcoal and Kingsford full chimney on top for the first 2 hours, after that it was every hour re stoke, went with 1 apple chunks and 1 cherry and a scoop of Charcoal. After the 5th hour I dropped to 1 wood chunk and charcoal until the wrap at about 170. Finished at the same temp at about 210. It came out great. Thank you for taking the time. I have a brisket on my new Pit Boss pellet grill coming out Monday. First time using a pellet grill so it could be a complete clunker😂🤣🍻 Thank you for taking the time to watch 🙏🔥👍🏼

I see you are not a rookie wrapping the brisket makes it more tender and it also works on ribs also I smoke them for about 2 hours depending on the color cook another hour then wrap in foil for 45 minutes no longer or they will be or they will fall apart and se mushy then I sauce them for 1 hour and I always put a rub on them 1 hour before putting them on.
Thank you, I have been doing BBQ for about 43 years. I am not a fan of unwrapped, it just gets too much smoke for my taste. Yeah ribs, for me, are 2 hours on smoke, 1 hour wrapped, and 15 minutes glazed/thin sauce to get it set, and done....there is always wiggle room but that's my general guide 👍🏼🔥

What did you have inside your smoker? I see the standard water pan but it looks like you had a brick or some other diffuser near the opening of the charcoal box.
Yup 1 fire brick to direct the heat to the middle of the cook chamber...makes for more even heat distribution for my Dyna Glo.....got the idea from my old reverse flow. Helps a lot

The Dyna Glo is a great small offset,. I can get similar results to my big Hilton 72" and not have to spend all the cost running the Big smoker for 1 or 2 pieces. I can do a couple briskets in it, 6 racks of ribs, or 4 pork butts. It has simplified my home cooks greatly, but it has its flaws. For $200 and a tube of high heat RTV, it's a solid offset. If you want a good barrel style, check out the CharGriller Grand Champ, OK Joe's Longhorn, Old Country Pecos or Wrangler or even a pellet grill. Guys are getting great results with pellet grills these days too....I don't pellet myself🤣😂🤣😂
I always do to the point that I can. I can't tell someone how to use a different smoker or different temps, I can't tell people how to trim as I do it very differently than most.
