You did an outstanding job, beating those whites are by hand in a copper bowl is not easy, but you turned a simple apple dish into a lovely addition to the table.
In Germany we do something similar, except that it only consists of raw mincemeat and onions (occasionally the spikes of the hedgehog are also salty sticks, depends on whom you ask)
