      we are often said to have a lit bit of a farmers accent. e.g. if my dad said farmer (he has the most noticeable accent) he would say it like this f-arm-eh-r. if you know what I mean.

    All hail the lady who can whisk a meringue by hand. I've done it a few times...but it can be quite tiring to get the egg whites fluffy.

      Copper atoms break off the bowl as you whisk, and react with the sulfur in the eggs in a way that prevents disulfides forming, keeping the eggs from getting grainy or overbeaten.

    Wow , so many flash backs from my childhood when my grandmother used to make those very dishes just like this cute lady did. No wonder why i learned from her to make jam and sweets that way. In fact my grandmother was a very victorian woman who was stuck in the XX century and beginning of XXI.

      Ketogenic Kim I think she was just hesitant to trust young Edgar with this very important task as the Lord and Lady were having guests in. As she gets to known him more, I’m sure she will trust him on occasions like this. This really should be a TV show. Cooking with Crocomb

      mariam kamal it is still in use now. You can find it in dollar stores (or pound stores in the uk) or Ikea

      Milo Rodriguez all of these recipes are from a lady’s book named Avis Crocombe. She wrote all of these down so now they recreated what she would’ve cooked like.

    Watching this makes me realize how grateful we are to have the kitchen technology we have today. I tried to whip a merengue using a whisk and my arm was iN pain and I didn’t even make it to soft peaks. BUT the Victorians were out here whipping it up like nothing like dang, I need to strengthen my arm

    I see there have been gadgets to seperate the egg white from the yolk even in victorian times. This really seems to be the ultimate kitchen task.

    You could also use this for Halloween and say it is a deflated ghost. Also, I think you should use a blowtorch to brown the peaks of the meringue.

    In Germany we do something similar, except that it only consists of raw mincemeat and onions (occasionally the spikes of the hedgehog are also salty sticks, depends on whom you ask)
