How to Make Almond and Potato Pudding - The Victorian Way

Mrs Crocombe has been busy preparing the perfect winter side-dish for the Braybrookes' table: Almond and Potato Pudding. Avis copied this recipe down from a book by Anne Eliza Griffiths first published in 1864, aimed at 'the moderate and economical, yet reasonably luxurious, housekeeper.' No wonder then that it appealed to Mrs Crocombe, who was likely working as cook-housekeeper to a baronet at the time.

INGREDIENTS
170 g/6 oz/1⁄2 cup cooked mashed potato (without skin)
115 g/4 oz/generous 1 cup ground almonds
285 ml/1⁄2 pt/11⁄4 cups milk
Finely grated zest and juice of 1 lemon
115 g/4 oz/1⁄2 cup butter, plus extra for the mould
Pinch of ground nutmeg 5 eggs, separated
1⁄4 tsp cream of tartar or squeeze of lemon juice (optional)
Salt
Chopped almonds, to decorate lemon slices, to serve (optional)
METHOD (from the Victorian Way cookery book)
If you do not have any cold mashed potato to hand, start by peeling, dicing and mashing some potatoes and allowing them to cool.
Put the ground almonds in a saucepan with the milk, lemon zest and juice, and butter. Warm until the butter is melted and the milk is blood-warm, and mix well. Remove from the heat and stir in the mash. Add the nutmeg and a good pinch of salt, together with the egg yolks. Mix well and set aside. Preheat the oven to 180°C/350°F.
Whisk the egg whites to stiff peaks (the cream of tartar or a squeeze of lemon juice will help). Fold the eggs gently into the potato mix.
Butter an 850 ml/11⁄2 pt/31⁄2 cups mould or 900 g/2 lb loaf tin and pour in the mixture. Give it a couple of gentle taps to settle it.
Bake in the oven for 1 hour until light brown and set through. Invert onto a wire cooling rack, demould, decorate the top with chopped almonds and serve hot, surrounded by lemon slices (optional).
You can also leave it to cool in the mould for 1 hour before turning it out, slicing it, sprinkling it with a little flour and frying it in a little butter.

5 months on and with even higher inflation many can't even afford to cook the potatoes, to begin with, and others could only afford the boiled potatoes, no adding eggs, almonds and lemons and then cooking for an hour.
Everything has become so expensive recently that I was actually so pleased to have found this recipe. Atm, to save a little money I cook a lot of rice with tomatoes and beans recently. Not that there is anything wrong with that, but a little variation surely is nice.
This channel is what keeps this planet bearable lol

They were paid - don’t call them slaves that’s actually incredibly offensive.
I'd love to see a full servant's table of meals to know what they ate daily
I can answer this. They ate a very healthy diet.
In those days, there was usually a big old pot hanging over the fire, filled with chunks of meat, marrow bones, herbs and vegetables, on a slow boil. This was dished out at mealtimes with chunks of fresh baked bread, and was normally followed by lots of fruit, fresh, stewed or baked. In other words, their diet was balanced and healthy.
Those they worked for, on the other hand, indulged in a variety of rich foods and drinks and over time, this had the usual detrimental effect.
A classic example of this is Henry VIII, half of whose physical ills could have disappeared had he but forsaken the over-rich foods and sweet dishes he was addicted to, and eaten the same simple food his servants did.

@@GoldCatPrincess I don’t think Henry the eighth is a proper comparison to the Victorian age. Have you seen what Victorians ate? The variety and the interest in healthy eating started in the 1800s. Or better yet, have you read what Henry’s court ate and why they were adverse to vegetables?

I'm very curious as to what that would taste like. I'd never imagine putting potatoes, almonds, and lemon together
have you had gnocchi before? it's like that but fluffy and nutty, the potatoe doesn't come through very much
Very yummy. In Catalonia we have a typical sweet that's made with potatoes. As long as it has sugar, it's yummy. And it's crunchy on the outside and soft on the inside

Recently found out I have some Crocombe ancestors from Devon, from around the time of our Mrs. Avis Crocombe; I wonder if we're related! Either way, I really love this channel
The recipes are supposed to be recorded in the 1880's or so, so if you can find your family in say the 184's/ 50's and there's a little Avis then it's possible you an Mrs C are related

What a treat! I noticed Mrs. Crocombe mentions consideration for thrift and using up leftovers. Seems in keeping with cooking with the leaner fare available in winter, even in grand houses.
From the sounds of things, this is hard times. If there is a poor harvest, the lords don't get as much income.
Even the rich had to be mindful of how much they spent, or they could lose their fortune quite quickly.

I loved seeing the potatoes masher and the lemon squeezer. Classics that weren’t kept around but if we ever find ourselves time traveling we’ll know what these tools are for and how to use them.

@@trenae77 Even regular potatoes would do the trick! There is a traditional treat in my nation called "potato candy", which involves mashed potatoes, powdered sugar and peanut butter!

Yep - there's a South Asian dessert that includes mashed sweet potato, milk, condensed milk, sugar, cardamom and ground & chopped pistachios. Very, very sweet, but absolutely delicious.
