Man! I made a mushroom risotto last night with a pork tenderloin and green beans. I like the diced mushrooms instead of thin sliced. Chef Tom's reaction to taking that first bite was everything.

Had a dish that was basically this (minus the Pecorino), but with wild Rabbit instead of steak. To this day, probably the best meal I’ve ever had. I can’t wait to give this a go!

Excellent video, love making risotto, pares so well with most everything. Have made it with Farro a couple of times using the same method, comes out in some cases better than using Arborio rice

Fantastic recipe. I didn't use a grill, just a cast iron skillet on my induction cooktop. Start to finish it took about an hour. I served it with a dish of steamed Mexican squash. After 2 bites, my husband said "it's a keeper", so I'll have to transcribe my Post-it note with the recipe into an actual recipe that I can use again.

Amazing! Curious why not adding all of the stock at once won't yield that same creamy-ness?
It’s using a combination of evaporation, absorbsion, and agitation with the rice. Too much liquid at once and you don’t get the same agitation of the rice to get the starch to the level of creaminess risotto needs. With a little liquid at a time, the rice can ‘scratch’ against each other to maximize the starch.

Most risotto ive made takes about 35-40 min. Are you letting your steak rest that entire time and still getting a warm finished product? I usually only rest smaller steaks for 15 min so just curious.
That's odd, all my risottos are about the 20 minute mark. Do you cook it really slowly? I have it on a gentle heat and it goes soft in that time, if I did it for 40 minutes it would be mush. Are you using hot stock? Heating cold stock increases the cooking time of course.
@@zakelwe Yes I Always use warm stock. I'm talking about from the time I start sautéing my onions and mushrooms to toasting the rice to adding my stock. Usually always over 30 min.
@@lovesoutdoors6261 Thanks for the update, I see what you mean now if you include everything., not just the rice cook. I think I would cook the steak at the same time as the rice, so doesn't rest so long and go cold.

I would like to see you cook for me. ha ha
Looking good and simple however, this recipe needs a change for my tastes. Instead of one steak, we need two of them, one in the pan and one on the grill (for me). I wouldn't ever pass on the option to grill a fine steak over charcoals to get that smokey BBQ flavor ! Someone else in the crowd can savor over the cast iron singed steak.

Wait, what? Did Chef Tom actually say that Risotto is the greatest way to prepare Rice? Nearly a billion people from South Asia will disagree. Biriyani is the greatest Rice Dish ever made.
