Old Country Smokehouse Wedding Cook 8 Briskets

  • Cooked 8 Packard briskets on my Old Country Smokehouse, it was stuffed to the brim, but she got'er done.
    6 @ 12-14 lbs.
    2 @ 18-19 lbs.
    Also, I smoker 32lbs of Earl Campbell's sausage.
    Being so much to do, filming was also a challenge, doing it solo.

    Wow!! I did 8 pork butts for my sons graduation and thought I did a lot!! I hope they told you 100x How much they appreciated what you did!! You saved em HUGE $$

      Yea, ya don't think it's too much, till your in the middle of it. It was a lot of work. Too bad I didn't have the camera running during the smoker fire, during this cook. It would of been spectacular, , about a 5 ft fire ball when I opened the door. Stay tuned, I have a smoker fire coming up on another video soon. Thanks for watching.

      My buddy originally said 4 briskets, It amazing how it grew. That water pan full of grease starter a fire twice while I accidentally over filled the water pan causing a flash fire, Too bad the camera wasn't running. But that gonna be a vid just on that. Thanks for watching.

      What's strange about these, when I shopped for mine (6 months of looking) when Acadamy is out of stock, they pull the listing off the internet. I originally was looking at the over under style they had, a cabinet was more appealing, cause snack sticks are what I was wanting to cook also, but these were 100.00 more, a

      Wife went out of town this past weekend and it gave me time to catch up on editing. That wedding was mid April. I also did his wedding video, which took me two weeks to get it edited, kinda burned me out on editing, Two weeks straight most evening, staring at the laptop screen. I must have 20 vids waiting to be edited. Maybe it'll snow and I can get caught up.

      Dang didn't even know I was pushing a 100, last time I looked it was 78, been moving last couple months and everything is everywhere. I need to get off my butt and edit some of the vids I have 20+ just sitting in the computer, waiting on me to edit them. By the way, nice intro to your site. My goal this year, is an intro too.

      This cook was actually over stuffed, that bottom rack was way too packed, it restricted the air flow for about 7 hours, once the briskets shrunk a bit, the temps evened out. About 2in from the inner walls are hot zones, the water pan blocks the direct heat, since the fire box is directly below. This smoker is perfect for 6 - 12lb or smaller briskets / 2 on each shelf or 3 18lb or bigger/one per shelf. that way their at least 3in away from the hot zones. I also cook fat side down on the bottom shelf, a little extra protection if the water pan boils dry, then temps can really spike. I use it with water always.
