- Today I smoke a picanha brisket style. I finally got my hands on a quantity of it so I'll be doing some experiments with it throughout the summer. I did this round on the Yoder YS640 and got in the 200 range in about 6.5 hours for those of you that will be asking.

Wood fired hot and fast they come out fantastic but there's not enough fat in there. I'm sure they came out pretty good but I suspect I'd have the same opinion that the rotisserie would be better.
