Yes, cakes made from tapioca starch are supposed to be chewy, but not too gummy. If you are not familiar to these kinds, maybe you find it "really gummy". To me, it is not. There are cakes that are a lot more chewy, like "banh bot loc", and I love that texture :)

I'm gonna try and make these when I can get my hands on the ingredients. The light blue one looked REALLY awesome, like a sapphire almost. Though instead of using Pandan Extract, I'm THINKING of using some Roosen/Rose Paste. Do you think that would be all right or do you think the flavours might clash negatively?
