It's about the principles of cooking and how people, chefs, cooks just KNOW how much this or that to add without a recipe. It is SO much fun to read from all the funny stories and anecdotes. There is a netflix show of it too that has great cinematography. TLDR: salt, fat, and acid are all you need to make a good dish

The easiest way to get the thick skin off of gourds of any kind is to actually oven roast them first - the flesh comes away from the skin ezpz after that. I do it with butternut squash all the time.
I really really recommend throwing your garlic and oil into the pan first and letting the garlic and oil infuse together before throwing your other food in there such as the Brussels sprouts!

I’m not sure if it’s different in Canada, but I got the cauliflower wings from Buffalo Wild Wings and later found out they are fried in beef fat. Everything is. So the wings themselves are vegan but not after they’re fried (in America)
@@vistaoalry4883 it’s referred to as beef shortening which is the same thing as fat. Usually the same reason you can’t eat vegan at most Mexican restaurants. They use lard which is another name for shortening or fat. Once it’s melted it’s the same as trying to fry in oil.

They have a light onion, garlic flavour but a little sweeter! They are part of the same family as onion and garlic. The best way to try one is sautéing them slowly in olive oil with some other veggies! They can be added to soups or with pasta like I do :)

Humans in all of history were able to eat intuitively. However because of diet culture, it has completely gotten away from so many of us. ( either we under eat or over eat ). That is why I encourage more people to get back to their roots and internal knowledge of their bodies so they can do whats best for them, as nature intended!
Tbh I feel like shit on days where I don’t consume coffee, and I dislike that apparently I made my body dependent on it. But still every once in a while I try to not drink it just to make sure I don’t absolutely DIE without coffee hahaha
