Aegon isn’t dead he is just injured
Plan for battle was to Aemond attack dragonrider(s) from opposite sid ewho will come by surprise; however Aegon flying on Sunfyre forced Aemond to dealy his attack with Vhagar because of uncertaintity around new situation, until Aemond assesed new circumstances.
Aegons dragon is also still alive
Rhaenys was definitely the most experienced rider on Team Black and it is real shame war took her so quickly. We never saw her full potential 😢💔
Even if Aegon died, war would not end - Greens have Aemond and Daeron and they would be fight, either for themselves or in the name of Aegon little daughter, Princess Jaehaera, who is by Andal law his heir. As long as they have Aemond and Vhagar, Greens will never surrender. He is their biggest weapon. Even if Aegon would die and throne went to Jaehaera, she is little - Aemond would become leader de facto, wheter he would usurp his niece and take crown for himself or wheter he decided fight in her name.

Meleys was smaller but more agile than Vhagar; there was a chance she will able to win. Rhaenys decided it is worth risking her life, as killing Vhagar - and with Sunfyre severly injured and Helaena's dragoness never ridden by her - Greens would not have any adult dragons on their sides.
