This video helped me way more than other videos on RUclips. I gave up when making pasta for a my project but this has motivated me to do it again. Thanks so much!

My mom and both grandmas have done this all their lives. Result is amazing. Theoretically you can do this with a machine but honestly you can tell the difference if you're used to hand made. Thank you for sharing.
Wow. SO awesome! Thank you, Grandma LuLu! I just spent 4 hours making home made pasta, which is RIDICULOUS! The reason it took do long is because I dont have a rolling pin like Grandma Lulus, so I literally stretched every single noodle strand by hand! Im going to make one from my broom handle. Thank you so much for this wonderful video! I appreciate it very, very much! God be with you all. 💖🙏🏼🤗
I read a description of this method in Marcella Hazan's book. It took far too long to find someone demonstrating it properly. Thank you so much for sharing the video!
Let us know how it goes! If you haven't already, subscribe and click the bell for new video notifications. Grandma Lulu has more pasta and other recipes coming soon :) In the meantime, check out her gnocchi from scratch video: ruclips.net/video/X32p5dKWSUE/видео.html
If you want a long rolling pin like Lulu's. Don't spend a fortune, just buy a broom or mop handle from your local hardware shop , cut it to the size you want (You might even get two out of it) Give it a good clean with fresh lemon juice and away you go!
We definitely will! Thanks for watching and taking the time to comment. We hope you'll consider subscribing to our channel for more videos like this, including from Grandma Lulu :) Click the bell for new video notifications.
This is good, but I also learnt a lot by applying some of the traditional techniques for hand rolling thin dough which Japanese use for Soba which is capable of making it not just thin but into a square shape
Hi Hannah! The key, as Grandma demonstrates, is to start by pulling in about 3/4 of the flour called for and adding more as needed. Let us know how it goes! We hope you'll consider subscribing to our channel (it's free!) and clicking the bell for new video notifications. More from Grandma Lulu coming soon...

We try to add at least one new video a week :) Buon appetito!
Yes, you can! If you prefer a slightly more 'al dente' texture to your final cooked dough, this other recipe on our channel will deliver that: ruclips.net/video/oyv-u3u0slU/видео.html
The thing they don't mention here is the board she is rolling the pasta on. It's unfinished wood and gets "impregnated" with flour....which makes the process MUCH easier. If you try to do this on a typical American countertop (formica, finished concrete, stainless steel) it will be far more difficult.
You can use a stand mixer. Be sure to start by adding just 3/4 of flour recommended and add more slowly as needed till you reach the consistency shown. It’s easy to add more flour, but harder to correct a dough that is too dry :)
Hello guys. I tried making this at home but when I boiled it. It wasn't cooking, I boiled for abt 20 minutes for my pasta and it was just soggy and had a squishy taste. If you can help me please do so I'd really appreciate it
Hi there! The water should be boiling vigorously before you add the pasta (lots of bubbles and activity). You can see how vigorously for a moment in this video (minute 2:00): ruclips.net/video/4s_LO4tORxo/видео.html However, we will plan to release a video soon on 'how to cook pasta' for those who may wonder what exactly 'boiling' means for pasta and how to know if it is done. Also, fresh pasta only needs a minute or two-much less than dry pasta which still never needs more than about 10 minutes max to cook it to 'al dente', depending on the pasta. Fresh tagliatelle prepared properly only needs about a minute. So, that explains why your pasta was too soft. We appreciate the question! It lets us know what videos we should add in the future for those who may be totally new to cooking pasta. If you haven't already, subscribe (it's free) and click the bell for new video notifications. :)
okay i made this it’s literally resting as i speak and honestly i don’t think i did it right, maybe because i used all-purpose flour so i’ll check back and update
All purpose flour is fine. Just remember there is no set portion of egg to flour. It's always best to add about 3/4 of the flour recommended and add more as needed until reaching the consistency shown in the video. Let us know how it went!
Hi Laura- It wasn't a serrated knife, but a very long and sharp one. We will review the subtitles to see if any corrections should be made to make things clearere. The term you are referring to is 'tagliatelle' (a pasta similar in size to fettuccine). You may find the written guide on our website to be useful: www.piattorecipes.com/fresh-egg-pasta-dough-recipe/
Great question! In fact, you can (see the spinach pasta in our lasagne bolognese video as an example). Just be sure to add just 3/4 of the flour called for to the bowl at first and only add more flour if needed.
Hi James-Italians like their pasta 'al dente' (which literally means 'to the teeth' or with a bit of bite. Could it be that's what you might be interpreting as 'raw'? By Italian standards, other countries tend to really overcook their pasta.
@@PiattoRecipes hi thanks for the reply! It’s less of a texture thing and more about the taste. When i cook it much longer that raw dough taste goes away but i suppose i’m just not familiar with how fresh egg pasta is supposed to taste

It's always a pleasure watching someone do something well.
Her hands are like my mother's. I miss her so much. Thanks for the video.
Our pleasure! Thanks for watching and taking the time to comment. Very sorry to hear your mother is no longer with you.
Just beautiful! What a very, lovely lady! Thank you so much, dear Grandma.
Grandma Lulu is a true artist, that’s so impressive.
Nonna Lulu says thank you :)
The lack of cuts in this makes it by far the most valuable video for making pasta on youtube. bless

Honey, go get a dowel from the hardware store. Like one for the closet. 36" is a good length.

Great tip!
Better yet, buy the larger wooden rod used for hanging clothes. No finish to worry about and it closer to the diameter they usually are.
i used semolina flour and a little bit of water per another recipe but followed this method and they came out great!
Excelente, que bella abuela, receta de oro. Dios te bendiga desde Costa Rica
This is just beautiful 💎
I’ve made this before
And I’ll do it again!
That was awesome!! She makes it look so easy :)
It is perfect grandma

Wow!! Very simple and straight forward presentation 👌
This video was super informative! I used too much flour using another recipe. This one gives a lot of great advice. I'll try again!

@@PiattoRecipes It went great! Thank you!
I had my first try today at making soup noodles. They were good enough for soup at least. Hahaha

Thanks for taking the time to leave a comment! Grandma Lulu loves them!
I rather learned from a real Italian woman like her than someone who doesn’t know what they are doing with fresh dough.
Thank you nonna :)
Thanks
+Mad skills!
Nona has those “I’ve been doing this by hand for decades” forearms 🤯 💪
Waw parfait merci beaucoup
Nice video! I'll try

your very good ❤️❤️🌹👍🏻
Also nice asmr 😂
The part where she was rolling the dough reminded me of the Pacer test 💀
If you want a more rich in color pasta use pasteurized eggs it makes a great difference ❤️❤️
Can I used the same Doug for other pasta such as ravioli?

Grandma Lulu says the process works for her on other surfaces as well :)
@@PiattoRecipes I've just noticed nearly all the Pasta Grannies use unfinished boards....I make pasta a lot and wish I had one!
Rolling pin? Looks like a curtain rod to me! Don't be messing with Italian grandmas!
Can a kitchen aid machine work as good?
You can use a stand mixer. Be sure to start by adding just 3/4 of flour recommended and add more slowly as needed till you reach the consistency shown. It’s easy to add more flour, but harder to correct a dough that is too dry :)

AKA broom handle.
Did she put olive oil as well?
Lulu does sometimes add a drop of olive oil (no more than 1 teaspoon for pasta for 4).

At 9 minutes is that a serrated knife.
It would be good if you could explain any uncommon terms such as Tallitelli

Just curious can’t u not mix it in a bowl instead of me spilling all over the place lol

I don't get it, my pasta always tastes raw still after cooking after a minute. It seems to be about the right thickness too.

That grandma is not allowed to do that. Cooking is only for men.
What?
300 grams bruh can you be specific on how many cups I need to use
