I made this tonight for dinner. Really delicious! Thank you so much. Hubby loved it and wants it again. One thing I did differently was to let the cream cheese soften, making it easier to mix all the stuffing ingredients. After I stuffed the chicken breasts, I put them into the fridge for a couple of hours before cooking.
The stuffing ingredients sounds just like what a local Italian restaurant uses for its stuffed eggplant parmigiana, and it's delicious. Looking forward to trying this. Thanks!
This is hitting me right now!! I’m super hungry and that would really hit the spot! I can’t eat much spinach, but I think if I chopped it super fine it would be okay. Or maybe I could sub in green onions or even finely chopped zucchini, well drained. Even green beans!
I’m not a huge fan of the taste of cooked spinach and was thinking maybe the spinach could be replaced with chopped basil or artichoke. Seems they would both go good with the rest of the filling.
Artichokes can be kind of high in carbs though....I wonder if you subbed in hearts of palm would that still taste good? I know they are softer than artichokes which may not work so well in this dish...
Made this last night. Its a keeper recipe! Chicken was moist and delicious. Prep was fast and easy. Will definitely make this again.Only thing i did different was omitted one cup of spinach and added one cup of diced artichoke hearts. It was sublime.

I am trying to get turmeric into recipes for the benefits of squelching inflammation. i am going to try this recipe. My one problem is cooking for 1. it is difficult as most recipes r for families or even a couple. i do not have a separate freezer. any ideas? if i make this for 2, can i freeze half? Thanx for your recipes.
You can just tell this is going to be super yummy. I don't know if I can dare to risk eating spinach. It made me sick a few months ago. 😞 maybe I could leave it out? Dunno... thank you Annie your recipes are superb! 😊❤

Oh, chopped artichoke hearts! But the pesto might overpower it… They’d be good on their own, though.
