I agree! We always have to keep thinking about what is in the food to make it rise or make it sweet or make it "low fat" In my opinion, I would rather be fat than skinny from having cancer! Self rising flour is one of those things some people just don't think about because it is all they have ever used. They charge a premium for their "old fashioned" goodness because their name has stood the test of time. In truth, they are using the cheapest ingredients to make their products.

I used Old Fashioned oats because that is what I use in my house. I never buy quick oats because they are sub standard and if I want quick oats I can just run the old fashioned ones through the food processor. Yes you can use all white flour if that is your preference, however the nutritive value of the muffin goes much lower than when you use half white wheat flour.

Noreen I'm eager to try this as I love to bake & my family loves to eat, so I guess it's a win - win situation! lol! This recipe reminds me of one that a dear neighbor gave me many years ago, when my kids were just toddlers. Now my kids have their own children & they're past the toddler stage. Anyway, back the to the recipe. It was called 6 week Muffins I believe. It was made from a whole box of Raisin Bran, along with eggs, flour, sugar and so on. After you had it all mixed up it was supposed to last in the refrigerator for 6 weeks & it too yielded 6 dozen muffins. My family didn't care for raisins, so I found a cereal that was just a flake cereal & they loved them. One time I went to a family event for the weekend & took a whole batch of them planning on having them for breakfast the next day, well I don't know if it was one of the kids or one of the guys, but before I could say "hey those were for breakfast" they were half gone! I bet you've had that happen to you a time or two. Thanks for the great recipe.

Is it better to store this in the fridge/freezer or will it last just as long in the pantry? Do you think this would be a good gift? I was thinking maybe a mason jar with pretty ribbon and fabric as a new home gift or new mom.
It will say aluminium free on the front of the package. You can also check the ingredients list. Or, you can make your own baking powder from baking soda and cream of tartar.
Nice mix to have on hand since it contains baking powder what is the shelf life of the mix. I know baking powder loses leavening power as it ages? Also is cane sugar from Hawaii non GMO?
I don't use self rising flour because I don't know the quality of the additives they have put in the flour. I am fairly certain that they do not use an aluminum free baking powder in that flour. You use what you like, however, my personal choice is to truly make this from scratch.

No, I don't, sorry. I make my biscuits and pancakes from scratch. It is easy to do and you have everything you need anyway. I don't find a mix that useful for those recipes because there are so few ingredients to begin with.

can you use instant oats?
Cane sugar is not GMO. Katzcradul confirmed that. Make sure your sugar says Pure Cane Sugar. The recipe has the information about how long to store.
