I think I responded to your comment from another video but I am not to familiar with eSIM. If you have a physical SIM card in your old iPhone it should be put in the new iPhone and you can insert the SIM card before the setup.
Doesn’t come with any SIM card. You get the SIM card from your cell phone carrier. iPhone offers dual SIM via 1 physical sim and 1 eSIM unless you are in the USA and it just uses eSIM

Only the USA versions don’t have SIM card slots. Rest of the world offers eSIM and physical. iPhone 16 Pro Max included
