My husband and I love Rebel Cheese. As new residents of Austin, we are two plant-based people looking for good restaurants that sell vegan food and happened to run across them. I'm not exaggerating when I tell you that their cheese and food/wine menu are phenomenal. The charcuterie board alone is amazing!
I wish they would make a first time buyer kinda box. I’ve never tried vegan cheese and would be interested to try but Mark’s and Lori’s boxes on the Rebel Cheese website are $115. That’s so much for me to spend and I can’t justify it even as a splurge cause I have no idea if I would like it or not
Hi there, thank you so much for this suggestion. We have a Sampler Box with our two most popular cheeses (Brie and Smoked Cheddar), and also offer free samples in our shops in NYC and Austin, if you are ever in town! hi there! We use the same techniques as dairy cheesemakers, except we apply those techniques to nondairy milk. From there on, it is the magic of cheesemaking (culturing, aging, etc) that makes our cheeses develop very similar textures and flavors to dairy. We hope you give us a try one day!
Hi there, we use the term "cheese" because we use all the same techniques as dairy cheesemakers, except we apply those techniques to nondairy milk so that folks who don't consume dairy can enjoy cheese again! By employing all of the same cheesemaking techniques as in traditional dairy cheesemaking, our nut-based cheeses develop very similar textures and flavors to dairy. We know this is different to what most of us grew up with, but we hope you give us a try with an open mind some day!
Rebel Cheese, at least the restaurant is awful. The worse coffee I've ever had and the food was terrible as well. I was going dairy free for a bit and there are much better options. Follow your heart is a lot better.
I guess it's on each of his/her own because I really enjoy their restaurant. Haven't tried the coffee though. Follow Your Heart is good too, but they don't have some of Rebel Cheese's options.
Hi there, this is a great question! Everything we use is vegan and plant-derived, including our cultures and enzymes. There are many naturally occurring enzymes in plants, and we use the same cultures as the dairy industry, such as Penicillium Candidum and Geotrichum Candidum, which are healthy fungi. We hope this helps, and thank you for bringing this up!
Hi there! There are many people who don't eat dairy, whether it is health-related or for other reasons. If you ever give our cheeses a try, we'd love to hear what you think!😊
