Why not use wider clamps, and clamp to the width of the 2x4?

Or, just use a handful of construction or drywall screws. It’s not necessary to purchase $200 worth of dovetail clamps to secure a piece of plywood and 2-2x4s to a pair of plastic saw horses

Can't you achieve the same thing with normal clamps without the need to rout a dovetail?

Yep.
And if you use the Worx "Pegasus Folding Work Table & Sawhorse" and/or the Worx "Clamping Sawhorses with Clamps" products, you get fully compatible systems and a set of clamps that are compatible with the products.
Plus, 2x4 pine or fir is 'softwood'. Personally, I'd be a concerned for the durability of the dovetails.
Of course, the video above from Microjig is from 2016, and today is 2020, and I bought my Pegasus products in 2018 and 2019. So, it is natural for improved solutions to be found as time goes by.
