It's called the "Crabtree effect," and we think it's a way for yeast to shut out competing microorganisms by producing a toxic chemical (ethanol) if it finds itself in a really good, nutrient-rich environment. Scientists have actually been able to modify the yeast to disable that sugar sensor, and it leads to fluffier bread! (See Lee et. al., Food Microbiol. 104, 103971 (2022))

For California, please do Manzanita. It does technically grow in neighboring states but it grows largest in CA and it’s an absolutely beautiful and very hard wood. If you don’t want to hike in the woods to find some dead manzanita, there’s some decent options on my grandma’s property that you could choose from. I’d be happy to meet up and show you where to take from.

I lost my dog, Juniper, a couple years ago. I got a tattoo of a Juniper branch so I can carry her with me. I’ve always loved anything juniper related since I was a kid. Your chanel is amazing, how you seamlessly fit together all these interesting amazing ideas and concepts, with great videography is beyond me. Im pretty depressed and getting up is hard, so seeing you, someone who i know isnt a pro but that i have watched grow over the years makes me feel so inspired. To make bread, videos, and most of all to work with wood.
You remind me a lot of my grandfather. He had quite a few woodworking tools in his garage. He taught me to use the tools with him to make various toys and crafts when I was little. Every trip to my grandparent's house included a wood craft with Grampy. He passed a few years ago and watching these videos makes me feel like I'm a little kid again and he's showing me how to craft. I humbly request a Rocky Mountain Maple for Colorado. It can have some incredible color variations in a single piece of wood. It also grows all around the western and intermountain states, so it should be fairly easy to get ahold of. On a side note, I'm so glad I found this channel, its fantastic and warms my heart to watch. Thank you
Mesquite is a dense wood and can be a little hard to work with but I think it is a rather attractive wood and love the way it smells. Also you can make a flour from the beans. It's also hard to beat the flavor of mesquite smoke in BBQ. I'm sure there are other culinary uses for mesquite as well

Junipers are one of only 3 conifers native to the uk- fascinating that it's native to large swathes of north America too!
There's also a southern mediterranean variety that makes red berries/cones!
