    As a channel that has now been out to the Still Austin Rickhouse for 2 different Still Austin single barrels ( a bourbon and rye), we can confirm Christian is one if not the best single barrel manager out there. There is NO ONE who puts more into making your single barrel selection the perfect pick for your group. Rock On Christian! Cheers!

    So when doing a barrel pick do you ask the group before they come down if they want samples that match your traditional flavor profile or if they want ones that are different and more unique?

      There can definitely be some discussion before any sample selecting occurs. But usually everyone just let's Christian do his thing and he will provide 4-5 truly unique samples to taste!

    I’m a head lab tech for a major oil company. We use the same Anton Parr hand held to check gravity on some of our in process products.

    I volunteer to taste a pour for you. lol. Here in Wisconsin we have no intense heat like that, and sometimes it’s tough to find a Texas whiskey.

    `That`ll do`. Hey that`s my line when I find a nice bottle! Very interesting vid on the difference between each barrel & the work involved in checking each during the aging process. I keep hearing how good Still Austin whiskey is but I never see it here in the UK even though I`m always on the look-out for it.

      We would love to be over there! Just hard for us at the moment to distribute, but i believe there are a few bottles floating around through custom importers.

    A happy new subscriber. Had no idea you even had a channel. Will check your content. I love the bottles I’ve tried so far. I’m in Southern California, so there’s that as far as availability. The Red Corn Bourbon is my favorite so far. I would have loved to have tried the blue corn that I’ve heard so many good things about. I will definitely visit the distillery when in the area 👊 Best to y’all

    Thanks for making such a great product. I have to leave the state of AL to find this stuff, but it is absolutely worth it.... But, now I need to know where can I get those hats you were wearing? They are fire! I do not see them on your merch store.

    FYI when the whiskey leaks a little and forms the gooey stuff that is known as "distillers candy" but it does not taste like candy! As to the waterfall- the black you see is where the water in the whiskey hits the steel hoop and turns black. The black is not from the char.

    I noticed your barrels are standing upright. I think most other distilleries have them on their sides. Does it make any difference?
    Also, does it make any difference if you open them in winter, or summer?

      Excellent question! You are correct that traditionally barrels are kept on their side. We have chosen to palletize our barrels instead because it gives room for more barrels and gives us the ease of moving them around inside the rickhouse when needed! With the Texas climate the way it is, it truly does not make a difference for them to be upright or on their side! In fact we have one rickhouse with all the barrels on their side.
      Secondly our winter here is basically just a jr Summer so it doesn't make a huge difference.

      Also, if water was not added after barreling, what do you think the proof would be, when dumped?

      Seelbach check them. I use them all the time don't gouge you msrp price plus shipping which I don't think is crazy last order I got 4 bottles for 156. One lucky seven three Fiddler.

    filmed jan 5th....2 weeks later and the bottom fell out of the temperture....I wonder how that effected the barrels?

      They were all ruined, we just dumped them all down the drain. No but seriously, the crazy weather swings in Central Texas are what make aging them here so special. We had a 50 degree temperature swing in 24 hours earlier this week!

    I love how every distillery in every state says "our climate is perfect because..." and they all compare their climate to Kentucky. Does TX whiskey age faster? Yes. Does it age better? Nope. The longer and faster aging that occurs in TX also imparts more hard oak tannin in a short time and doesn't have enough time for that oak tannin to turn sweet. If a TX distillery could pull their barrels after 3-4 years and then age them in a cellar/climate controlled facility for an additional 4-6 years they would have something special. Instead, they just produce harsh and young whiskey.
    Again, every distillery defends why their climate is better than KY unless their climate is the same as KY (lower IN). Most are just wrong. The only state that has produced whiskey that I find ages better than KY is Northern Cali. There is some insane whiskey in Northern CA. They hit that right balance of temperatures where they get plenty of oak interaction but they also don't have the same cold swings that you see in KY that halt aging for months. They also have a moister climate than TX and I'm sure that helps. Redwood Empire is killing it for that reason.

    I’ve heard both good and bad about Still Austin. Probably has something to do with the statement that all of their barrels taste wildly different from each other. Maybe find a way to dial in a little consistency.
