This is great for me. I’m a young guy who never really thought much about cooking, but really bad food restrictions have recently forced me to go full vegan. It’s been a bit overwhelming since I’ve never really cooked before, let alone cooked healthy. But I’m going to try these recipes tonight! Edit: I did it! I made a few mistakes, and had to substitute some ingredients. But was easily the tastiest thing I’ve ever cooked lol. Thanks so much!

Made the mushroom one today and it was divine. I used rice flour and subbed coconut yogurt for non-dairy oat and coconut milk half and half I found at Walmart. Also added some fresh parsley and green onion in place of the thyme. Highly recommend, thank you!
Omg!! I just made the vegan stroganoff....and it is so good!! I used to eat this alot when i used to eat beef...it's now that i don't it's nice to eat a vegan version of my favorite pasta dish.thank you simply quinoa...will be making these pasta dishes again!
I make up a batch of sauteed garlic, tomatoes, and zucchini with Herbes des Provence, and smoked paprika. I will add a bit of stock or a splash of white wine to this and then toss in some hummus which thickens it up beautifully and really enriches the dish. Then I toss in some soba noodles which I had cooked earlier. Yum.
The algorithm brought me this vid this morning. Made the mushroom sauce for dinner and it was fantastic! Liked and subbed and my wife is following you on pinterest.
I made the Cacio e Pepe pasta first. I enjoyed it but I think it needs another ingredient to give it more flavor. I love the concept of making sauce out of cashews. It’s intriguing and very healthy.

Just made the stroganoff, I only had the fettuccine noodles in my cabinet so that’s what I used. IT WAS DELICIOUS!!! I didn’t have yogurt but I used dairy free sour cream with a little bit of almond milk. Licked the bowl clean. Thank you for the recipe sis.
Here I am, back to make the mushroom stroganoff for a 2nd time. It was SO GOOD last time. All my kids loved it! My husband didn't get to try it though and he is not vegan, so if he likes it, that is a HUGE win because the plan is to get my whole family eating vegan not just me. Also, I wanted to say, the last time I made this, I didn't have any vegan yogurt because it is hard to find it here without nuts in it and my son is deathly allergic to all nuts, so I just used full fat coconut milk that I refrigerated and separated the fat from the liquid and just used the thick fat to make the sauce creamy and it worked perfectly. I know I could make my own yogurt but this was just way easier. Anyhow, I always love your recipes. Some of your soups are my favorite! Thanks for the great vegan meals that I can get my family to eat.

Instead of yoghurt I recommend using either CANNED coconut cream or milk or soaked then blended cashews
