Once you have enough said Dark Matter, you turn it on, and blow up EVERYTHING IN THE GALAXY at once. And then you win. Somehow. Oh, and the entirety of the rest of the empire declares war on you. It does liven up the gameplay somewhat.
On the matter of "you win, somehow," the specifics of the megastructure is that you're building a machine that uses matter in RealSpace to tear a gaping hole into the Shroud (basically the Warp) with the intention of purging every thing inside, conquering it by force, and using the entire galaxy as fuel to merge both realms and ascend to godhood.

There used to be a fun little thing you could do with Clone Army Death Cults, where you you could set up a one system vassal and bully the shit out of them, whilst simultaneously unity rushing, and this would allow you to get to the final stage of "Become the Crisis" by 15 years. So you then run around the galaxy with a star cracker, whilst most of your opponents haven't even researched cruisers yet.

If you want a fantasy version there is Endless Legends. Basically everything in the Endless series(es) all happen in the same universe but at different time. Unlike Civ that force you to buy a new game then abandon it, the developers of Endless games keep adding new mechanics and races/species
If you're wondering- the reason to colonize a gas giant is that gas giants tend to be good sources of anti-matter. Anti-matter made for some incredible beam weapons before they nerfed them. Still useful, just less so. You need some *real* tech to make a gas giant colony viable though. or play as something that cares about habitability less, like the Riftborn or Vodyani.* Of course, you probably won't see this. *Horatio can be built to do almost anything- if you have enough luck, planning, and patience.

About "colonising" the gas giants, I don't think that there would be an in-atmosphere city. Instead, I think that there would be a space station with some sort of shuttle to harvest gas/minerals/whatever from the atmosphere
Not sure why the myth of our sun being yellow still persists when we know for a fact its a white star. The atmosphere does make it murky kind of like the harvest moon but as seen from space its definitely a white star.
I still get nightmares from micromanaging my Necrophage playthrough in Stellaris. We got the DLC, cuz hyper or w/e. Played like 20 hours with the species it added. My mate fell asleep repeatedly. Steam denied us the refund.
The Machanicus did a solar system wipe with a single missile in one story that the Tau where witness too. They denied what they saw and said it didn't happen.
Funfact our Sun are white/blue but its seems yellow becouse of fotons crossing our atmosphere. On surffece of Mars where isn't a much atmosphere we could see the orginal light.
