How to sharpen a hand plane blade (my process)

There are lots of ways to sharpen planer blades. The same basic steps apply to chisels. The more frequently you sharpen the blades the less time it takes to get a razor sharp edge.

Do you use the same system with chisels as well

Yes, the rollers on the (Woodpecker) guide can be placed on the outside for narrower items like chisels. This gives the guide a wider placement on the stone to help you keep even pressure across the edge.
