How to Eat An Artichoke

- Okay, so I grew up eating artichokes - my family lived not far from Castroville, California, and they were a regular part of dinner for me. So when we opened Pacific Standard in Portland, with a food menu that serves as a tribute to West Coast cooking, I knew I had to put a steamed, chilled artichoke on the menu.
I quickly realized that not everyone grew up eating them and that how to eat a whole artichoke isn't just common knowledge. So we shot this fun video where I show you how I tackle an artichoke. As a bonus, I got to sit and eat my favorite food - not bad!

It's videos like this that make me wish RUclips had a "love" option...thank you for sharing, and for bringing back some fond memories of my own of growing up enjoying artichokes in Minneapolis with my Petaluma-native grandparents. Definitely going to have to seek out some Castroville artichokes (Ocean Mist for the win) and share them with my dad. (With some umami mayo on the side!) Cheers!

I'm from Eastern Oregon, and when I was 9 or 10 for my birthday I asked for an artichoke that I didn't have to share with my brothers. At Oregon State in the early 90's I remember Artichokes being 10/ 1$. So, I wasn't the only one eating them!
Ten for a dollar! Seems impossible these days.
I grew up in the midwest, but my parents are from Colorado and New Mexico, so suffice to say I ate better than a lot of my schoolmates, up to and including artichokes for dinner on hot summer nights. I didn't even know artichokes came from a can until I moved east. I'm some kind of mutant, I guess, because I think the hairy part above the heart is delicious if you squeeze a little lemon juice on it. Chewy, for sure, but oddly satisfying.
Don’t get me wrong, I absolutely love a marinated artichoke heart packed in a jar with olive oil and herbs any day.
The first time I told my wife to pick up some fresh artichokes, she looked at me like I had two heads. She had only had them from a can and had no idea how great they could be. Now I rarely get the heart.
I make a dumpling sauce that I then use to glaze the artichoke before grilling them and serving them with sriracha mayo.
Man, that sounds delicious right now, I can't believe I've never had mine with sriracha mayo, which is one of my favorites.
Man hope I get to come in and try one, now I will look like I kinda know what I'm doing 🤣
