what other people need to realize, grilling just takes experience over the years and you have to really love grilling to turn out the best cooks each time, after you get a lot of grill time, YOU then become one with whatever grill you re grilling with, at this point, you feel the heat zone differences , with each grill and when the grill lid is on, if you are experienced, then you can feel in your bones, the way the meat is cooking, hard to explain, but all will understand after you gain the experience, thanks so much for your viedos
I read somewhere that before adding food to the grill, all of the charcoal needs to be *white ashed over* or else bad flavors from the *black* charcoal would cause off flavors to the food. What I have done in the past is use a seperate fire area to have burning charcoal so when it is ashed over I would throw in the ready briquettes (10ish) to my grill. This way the temps would only fluctuate 5 to 10 degrees only.
This is 1 of the best videos on exactly what I was looking for. I don't have an expensive smoker but do have a Weber just like yours. I want to use it for both grilling and as a smoker and was having a little trouble with that.

I have charcoal baskets for my Weber. Put them on opposite sides and fill half full of unlit coals then add hot coals.This works good for me doing chicken, turkey, ribs etc
I just stumbled on this video, and Wow! It makes great sense, and I'm glad someone took the time to encourage some of us common folk with our regular grilles for smoking. I'm gonna give it a try. I had a smoker, but it was a real pain cleaning. Great advice!

learned the hard way, last time grilled..... Used a cheaper charcoal and had hard time with heat....... Was using halve moon shaped (2) on two sides and putting meat in the middle.... Plan to use up the cheap charcoal and get back to Kingsford....
Thank you! It's very simple, you just drill a whole and push the stem of the thermometer through and tighten a wing nut. I can't remember what size bit I used but you just want to match the stem on the thermometor. Thermometers can be picked up on Amazon pretty inexpensively.

I’m thinking about making some andouille, the recipes seem to want to keep the heat a little lower (so as to not melt the fat) and smoke them for about twelve hours. Would you use this method to do that? I don’t want to get to the last part of the process and ruin it. I appreciate any guidance you can give.

I read somewhere that before adding food to the grill, all of the charcoal needs to be *white ashed over* or else bad flavors from the *black* charcoal would cause off flavors to the food. Is there a process for adding more charcoal? Does it produce bad smoke if you add it mid cook? Or do you preheat the charcoal?

He's right... I learned not to use lump when smoking. It burns inconsistent, the heat fluctuates to much.

Yes you definitely could do that. Just keep an eye on the temp and adjust vents as needed.

How did you add the thermometers?
The thermometers use a small wingnut, so all you have to do is drill a small hole, stick the thermometer through it and tighten it. It's very simple.
