Recipe and Instructions
Dough:
4 Cups of flour
2 Cups of water
(adjust to make the dough elastic but not sticky)
Pinch of salt
Let the dough rest for 20 minutes and make the filling
Filling:
Select the herbs and greens of your choice. Green onions, parsley, cilantro, spinach, watercress and fresh seasonal wild greens make a tasty combination. Chop finely and toss with olive oil and pepper to taste
Cut the dough into chunks and roll out thin rounds. place a generous amount of chopped greens in the center of each round and fold the sides in toward the middle, seal the seam together and flatten the whole thing.
Cook in a pan over medium heat, with no oil. usually about 2 minutes or less per side
When they are done the outside should be dry and warm and the filling should be warm and wet.
