Figured it out. It's not the shape builder tool or shaper tool at all, it's the knife tool. You may not see it as there will be an eraser tool showing by default or maybe the scissors tool, but if you right click it, you'll get more tools including the knife. Hope this helps anyone watching this

It keeps telling me the top object must be a single path and i’ve made sure the shape is the top layer and text is at bottom idk what to do
for me I sent it to back and it worked ( don't press on sent to background just sent to back and it will work if not then I'm not sure ) :)
