She’s nice and I understand why she was there...to ask questions to make it educational and for it to be relatable to home cooks who are not chefs like him...but I prefer the more recent videos where it’s just him.

Good recipe, but not the best of Kailua shrimp recipes. I dip my pealed shrimp (not done by Giovanni) in a combo of flour, cornstarch, smoked paprika, and cayenne,with a bit of salt, and coat the shrimp. I have already made up a garlic butter sauce, for just 2 of us, I use 2 bulbs of garlic, that I have chopped in my blender, and add the garlic to 8 oz of butter. Simmer till starting to turn golden, then remove the sauce to a bowl, keep warm, while using the same pan to cook the shrimp, adding a bit of olive oil. OK, I use 2 full bulbs of garlic for just 20 pieces of 21-25 shrimp. Just cooked it again last night, so ono delish!
would be mean if you added more butter with the left over garlic in the pan, melted the butter w/the garlic and glazing it over the rice and shrimp...extra flavor...
I know we have our own ways of doing things, but not marinating the shrimp?! Come on! Also putting the garlic In earlier won’t necessarily burn it, it’ll give it that iconic deep garlic flavor.
Camille Pacheco marinating is the way to go. You’ll taste it all the way through. Also putting the garlic earlier is good too. You won’t burn it, but it’ll give that iconic deep garlic flavor

Kealii Le From my understanding, Romy’s gets that color by using prawns with the head on. There’s a lot of fat and other stuff in the head of the prawn that mixes with the sauce during cooking to give it that red color.
