- Aloo Ponge is a popular and flavorful snack from the Indian state of Maharashtra. It's essentially a spicy potato filling stuffed into crispy fried papads. Here's a simple recipe to try:
Ingredients:
For the Aloo Filling:
2 large potatoes, boiled and mashed
1 onion, finely chopped
2 green chilies, finely chopped
1-inch ginger, grated
1 tsp cumin seeds
1 tsp coriander powder
½ tsp red chili powder (adjust to taste)
½ tsp garam masala
Salt to taste
Fresh coriander leaves, chopped
Oil for frying
For Serving:
Papads (any flavor)
Green chutney (optional)
Sweet chutney (optional)
Fry the Ponge:
Heat oil in a deep pan.
Carefully drop the folded papads into the hot oil.
Fry until golden brown and crispy on both sides.
Drain on paper towels to remove excess oil.
Serve:
Serve hot with green chutney and sweet chutney for added flavor.
Tips:
For extra crunch, you can add crushed peanuts and bhujiya sev to the aloo filling.
You can adjust the spice level according to your taste.
