Cassava Karioka (Karioka Kamoteng Kahoy) Sweet Cassava Balls

  • Cassava Karioka is a delicious and easy treat made up of two simple ingredients: grated cassava and brown sugar. The cassava is formed into a ball and covered with brown sugar to create a glazed finger food cassava. Really, Cassava Karioka is just a ball of deliciousness. The lusciousness of crunchy caramelized sugar-coated Cassava Karioka is just so irresistible. I tell you, a single piece of this delightful finger food snack will not be enough. You need to make more!:

    INGREDIENTS
    2 cups grated cassava (kamoteng kahoy)
    3/4 cup sugar
    oil for frying
    DIRECTIONS
    In a bowl, strain the grated cassava until its juice is fully separated from it. Discard the juice and set aside the dry grated cassava for later purposes.
    Divide the sugar into half amounts for each cup of dried grated cassava. Mix well until it gets uniform texture and color.
    Scoop a teaspoon of the mixture and form it into a ball. Do the same with all of the remaining mixture. Coat each grated cassava with sugar before cooking it.
    Heat the pan over low heat then grease it with oil. Fry and stir the cassava balls for a few minutes until it turns golden brown.
    Strain the oil as you take it out of the pan. You can either put the Cassava Karioka through a bamboo stick or simply transfer onto a platter. Enjoy!

    Missed my childhood days it rich of memories. Lalung lalu na naging part ito ng kabataan ko carioca. Ito ang pinaka paborito ko sa Lahat pag recess noong elementary p lng ako nakikipag agawan p ako nito dahil takot ako maubusan 😆😆😆😏😏🙁🙁😕

    I had tried this before in Catarman, Samar. Sikat na street food ito sa kanila. Kung sa iba known ang banana-q, sa kanila eto. Promise ang sarap nito, crispy from the outside and chewy in the inside. Tagal ko na tong hinahanap sa youtube. Buti gumawa kayo ng video. Maraming salamat.
    ps. nakapag tanong po ako sa mga tindera dati, wala daw pong flour or egg.

    Kaya ho ni steam nen yan bago iprito dahil para hindi hilaw ang gitna. Madalas kasi pag hilaw ang gitna pag hindi ni steam.

    I'm curious about who created this recipe, since cassava is natural from Brazil, and "karioka" sounds like "carioca" that is how we call who born in Rio de Janeiro, our most famous city.
    But as a Brazilian, I never heard of this recipe before!

    I guess may flour or eggs Yan, Kasi though ma form mo Yan into ball, pag fry mo magiging buhaghag ito or maghihiwalay. Tapos nong tinusok NG stick parang matigas.

      Yes, brown sugar. You may use washed, but if not available, white sugar will do, but the color might be different.
