I can corroborate this. I work at Starbucks and we specifically have jalepeno stems in the back for Gus even though none of our food items have jalapeños.
My mom worked at subway when she was young. They received the jalapeños already sliced. She took it to heart to throw the stems in the trash. Even when her coworkers told her "it was pointless", that "people didn't notice", she'd still get rid of them. My mom is my hero.

I’ve never worked at Subway but I’ve worked at a place that slices jalapeños, and we cut the tops off the jalapeños and threw them away before putting them in the slicer. In the fast frantic world of Subway they can’t just add several seconds to prep time every day, that just don’t fly.

Several sandwiches were difficult to see, like Wendys #4, Jersey Mike's #1, and all of the Jack in the Box sandwiches, especially #3. I didn't count super tiny pieces or banana peppers, but I did include the piece that went flying from Subway #2. First column is the restaurant, second is the total number of peppers counted, third is the average number of peppers per sandwich, and the last column is the percent of stems in the peppers. I used to work at Hardee's, and we just got these big jugs of presliced jalapenos, and they came stems and all. After I saw Gus' video I started throwing out the stem pieces anytime I saw them. Even got told by my GM to stop because they were fine. I never stopped

The greener the jalapeño the cheaper it is: it means it was harvested before the flavour has developed properly. It takes a jalapeño about 3-4 months to completely mature. It is red, when mature - and amazingly delicious. Before it turns red it becomes super dark, sometimes looking black.

I used to work at 5 guys! The reason there's no stems is because they come into the restaurant whole and fresh, someone manually cuts off the stem, then they get sliced with a slicer. Maybe not every place but that's how we did it.
My older brother used to work at Five Guys and they do a lot of preparation with fresh ingredients, there's also a plaque near the register where you can see where their potatoes came from that they used for their fries

They could also have measured the weight of every item and divide the number of jalapenos by the weight. So they could post their results in the globally recognized stem/gram format.
You're getting a lot of troll responses, but I TOTALLY agree. Because there were WAY more jalapenos on the Subway sandwiches than the New Jersey Michael sandwiches, so the ratio definitely was a lot lower. I mean, no stem is acceptable, but if you get 1 stem in 4 pieces, that's way more egregious than 3 stems in 32 pieces
Five guys is the only place that doesn't have any stems because they're probably the only place to slice their own jalapenos fresh. Most other places get pickled jalapenos (which btw I never ask for my jalapenos to be pickled but they always are) shipped in either jars or bags prepped by massive food production facilities.
I know what he’s talking about with Subway. When you bite down on the jalapeño stem it’s really tough to chew. It’s feels like of like biting down a stick, and it is actually a minor inconvenience.

10:0916:52 Fully ripened jalapeños are red. We distribute them while they're green because it's cheaper that way. The orange ones are because they started ripening. Anyway, Subway gets their peppers in a big bag, soaking in brine and pre-sliced. I would bet that every single one of those places except Five Guys are getting their peppers the same way from the same place. It's just a matter of if the person making the item knows or cares enough to pick out the stems.

@@hurpaderpp It actually is the stem you moron, it’s like an iceberg there is more than just the tip, you see the stem has to connect to the jalapeño somehow, so the stem is partly in the jalapeño, therefore meaning the top of a jalapeño is indeed a stem, it is just the interior part.
That is why it’s slightly more edible than the exterior stem because it is fleshy but tough.

I used to work at Hardee's, and we just got these big jugs of presliced jalapenos, and they came stems and all. After I saw Gus' video I started throwing out the stem pieces anytime I saw them. Even got told by my GM to stop because they were fine. I never stopped

Five Guys just has fresh jalapenos. The other ones were all pickled. So they probably sliced them in-store, which means the person who did it isn't a maniac and threw the stems away. Good job, Guy #JalapenoSlicer.
The greener the jalapeño the cheaper it is: it means it was harvested before the flavour has developed properly. It takes a jalapeño about 3-4 months to completely mature. It is red, when mature - and amazingly delicious. Before it turns red it becomes super dark, sometimes looking black.

I used to work at 5 guys! The reason there's no stems is because they come into the restaurant whole and fresh, someone manually cuts off the stem, then they get sliced with a slicer. Maybe not every place but that's how we did it.

I worked at Five Guys for a couple months and can honestly say it's the only restaurant I've worked at without losing my love for their food. They spend so much money on their food

Because there were WAY more jalapenos on the Subway sandwiches than the New Jersey Michael sandwiches, so the ratio definitely was a lot lower. I mean, no stem is acceptable, but if you get 1 stem in 4 pieces, that's way more egregious than 3 stems in 32 pieces

The stem to not stem ratio for subway was actually so good. They basically gave you jalapeno sandwiches with meat as the condiment.
Five guys is the only place that doesn't have any stems because they're probably the only place to slice their own jalapenos fresh. Most other places get pickled jalapenos (which btw I never ask for my jalapenos to be pickled but they always are) shipped in either jars or bags prepped by massive food production facilities.

REAL CONSPIRACY: All fast food jalapeños are supplied by the same jalapeño supplier. I've worked at a lot of fast food and pizza restaurants and almost all of those are canned, that's why they're so yellow. Five Guys are the only green ones because they buy fresh jalapenos instead of canned

Here’s my theory, these restaurants get their jalapeños from a common supplier. Gus, you need to take this a step higher and get to the true source.

10:09 16:52 Fully ripened jalapeños are red. We distribute them while they're green because it's cheaper that way. The orange ones are because they started ripening.
Anyway, Subway gets their peppers in a big bag, soaking in brine and pre-sliced. I would bet that every single one of those places except Five Guys are getting their peppers the same way from the same place. It's just a matter of if the person making the item knows or cares enough to pick out the stems.
The server at 5 Guys recognized Gus and knew what he was up to, and made sure that his burgers used only the freshest and most stemless of peppers.

Gus, while I will say you are doing gods work, you may be messing it up. To be completely accurate, you would need to order many sandwitches from each restaurant on DIFFRENT DAYS. This would be because what if the batch of peppers they had in that day were a fluke, and were filled with stems, and the next day, they serve sandwiches all day with out stems. Keep on doing this amazing work gus. The world needs more people like you my friend.
