That's because they grew up and age /innocent image didn't matter anymore. Having your precious, innocent maknae in the center makes the whole group look precious and innocent. You can't really say it was luck because you pay attention to the dances she's in the center, it's clear that the choreographer wanted her to be in the center at the end of it. This is most obvious in gee(you literally see her rush to get in the center). I think luck would be the explanation for holiday (since(in holiday) she just happened to sing second to last and the dance didn't allow for any formation changes). Age is another reason taeyeon was put in the center. She's the eldest and the leader! It's fitting.
