- Dark Chocolate Mousse is on the menu for Valentine's Day in Chef Anna Olson's amazing kitchen, and she is going to teach you how to make this delicious recipe from scratch! Follow along with the recipe below and your Valentine's sweetheart will be impressed!

Recipe
Serves 6 to 8
7 oz (200 g) bittersweet chocolate, chopped
2 Tbsp (30 g) unsalted butter
1 cup (250 ml) whipping cream
¼ cup (60 ml) brewed espresso, cooled
3 Tbsp (45 ml) brandy
3 large egg whites at room temperature
pinch salt
3 Tbsp (36 g) sugar
chocolate shavings, for garnish
Directions
1. Melt the chocolate and butter in a metal bowl placed over a pot or barely simmering water, stirring gently until melted. Remove from the heat and allow to cool while preparing the other mousse components.
2. Whip the cream to soft peaks and stir in the espresso and brandy. Chill until ready to use.
3. In a clean bowl, whip the egg whites with the salt until foamy, then gradually add the sugar while continuing to whip the whites until they hold a soft peak when the beaters are lifted.
4. By now the chocolate should be cooled to just above room temperature. Fold the whipped cream quickly into the chocolate in 2 additions, then fold in the whites all at once (the mousse will be soft). Pour this into desired serving dishes and chill until set, about 3 hours. Top with chocolate shavings before serving.

Anna I have seen this video before and this chocolate mousse I have made maybe 2 to 3 times its delicious the last time I made it I used the egg yolks to make a chocolate creme anglese and I served the mousse with that.Now that you reminded me I have to make it again

Delightful recipe, it's always a pleasure to watch your channel. I've got a question though, a general one: should the whipping cream have sugar in it already? In Italy we have whipping cream w/ or w/o sugar (I suppose everywhere else is the same), and unless specified I never know which one to use!
I'm sure Anna used plain whipping cream without any added sugar. In the US and Canada they do not sell whipping cream with sugar. It's fascinating that you can buy that in Italy.

I was taught to melt chocolate 🍫 on DEFROST in the microwave. The chocolate never burns using this method. You have to take it out mid point and stir it, but the chocolate is melted “coolly” and easy microwave temp.
Can I use this in between layers of cake with chocolate ganache wall?? Or should I thicken it further with gelatine?
From her chocolate tart video, adding gelatin and then refrigerating to firm up more would be best for cakes

Anna said the brandy is optional. It's just for flavoring. The recipe will still work if you leave it out. But you could probably add a teaspoon or two of vanilla if you want to avoid alcohol.
