Perfect Chocolate Mousse Recipe

- This chocolate mousse recipes is delicious, incredibly easy to make and is the perfect dessert to serve up to guests or loves ones.
Ingredients for this recipe:
• 8 ounces semi-sweet chocolate
• ¼ cup unsalted butter
• 4 egg yolks
• 4 egg whites
• 1/3 cup sugar
• whipped cream
• berries
Serves 8
Prep Time: 15 minutes
Cook Time: 5 minutes
Cool Time: 90 minutes
Procedures:
1. Heat a medium size pot of water over low heat to the halfway mark until simmering.
2. Add the chocolate to a large metal bowl and place directly over the pot to make a double boiler.
3. Stir the chocolate using a rubber spatula to keep the chocolate moving around to help melt.
4. Remove the bowl from the double boiler and stir in the butter until completely melted and mixed in.
5. Next whisk in 1 egg at a time until mixed in. Set aside.
6. In a stand mixer add in the egg whites and mix on medium speed until soft peaks are formed, about 3-4 minutes. See note on what to look for.
7. Slowly pour in the sugar and mix on medium until stiff peaks are formed, about 3-4 minutes.
8. Remove the egg white mixture (a.k.a. merengue) from the stand mixer and add it to the bowl with the chocolate and gently fold in using a rubber spatula until completely mixed in. Don’t over mix.
9. Place the bowl in the refrigerator for 90 - 120 minutes or set.
10. Serve with whipped cream and berries.
CHEF NOTES:
Make Ahead: You can make this recipe up to 3 days in advance, simply keep covered in the refrigerator until it is ready to serve.
How to Store: Keep covered in the refrigerator for up to 5 days.
How to Freeze: You can keep it in the freezer covered for up to 2 months and eat it like ice cream, but if you thaw it, it will break and become too liquidy to eat.
When making your merengue, soft peaks will fall right over when pulling up your whisk in the stand attachment.
For stiff peaks, the merengue will stand straight up and hole when when pulling up your whisk in the stand attachment. Хобби

It came out perfect!! And creamy! Totally a bomb! I love it! I was craving at midnight for something sweet. Although I used 1/4 cup of sugar ( as in the video) instead the 1/3( in the description). I would have liked it to be a little more sweet so next time I would aim for it. THANK YOU SO MUCH

I went to an authentic French Kitchen today and they used powered sugar to the egg yolks...that was eventually added to the chocolate and cream with beaten egg whites. Pretty much like your recipe. So delicious!

This flavor combo is also pretty killer. Made it for siblings who aren't huge fans of regular chocolate but love matcha, and it's a hit!

I would use a liqueur, but not alcohol, and if doing it I would add it at the very end.

I made creme anglaise with egg yolks and used pasteurized egg whites instead. Added melded chocolate to creme anglaise and gently combined with whipped pasteurized egg whites.

I always thought chocolate mousse was whipping cream and chocolate, eggs too, but not meringue with whipping cream on top. Interesting.

I tried to make this… I got stuck on the second mixing part from ‘soft’ to ‘hard’ peaks. I even tried new egg whites and after over 20 min of mixing I gave up… I’m not blaming the recipe, I’m just sharing my frustration

It looks good but you have raw eggs in that mousse. That mousse could not have been that hot to cook those eggs. Nope I don’t eat anything that has raw eggs
