Ah that answers my question why even when I follow your cookbook's directions to a t, it cooks at the lower range of the estimated bake time range. And I'm always glad I take it out sooner but wishing it could be just a bit more moist. I was on the fence getting your Ultimate Guide to Keto Baking cookbook since I already have the Easy Keto Desserts, but you've just convinced me. Thank you for sharing your keto wisdom!

I have an electric oven and oh my goodness last Thanksgiving my turkey looked like a spider. I used a turkey bag too. I've used one a few times in the past but last year I was very barrased
I am having the same issue. I have used the almond flour from Natural Grocers and also from Costco. I suppose Bob's Red Mill is really worth having better baked products!
I am on the hunt for a keto chocolate cake that compares to a moist Duncan Hines pudding in the mix style box cake. I am not big on sweets, with the exception of Nanaimo bars (too sweet my teeth would shiver) and the not so sweet Duncan Hines chocolate cake. If I can find that, my world would be complete.
Omg I get super paranoid when baking keto because I check it and it’s way underdone so I leave longer and then it’s overdone the 5 to 10 min before is great I have used this method for cookies and muffins will have to try for cakes
When I am creating a new recipe, I stay near the oven. If it's underdone but I think it might be close, I add only 2 to 3 more minutes. Then I check again, check again, check again!

I live in Cuenca, Ecuador at an elevation of 8,399 feet. Makes a difference, so great tips.
Oh yes, altitude makes a big difference. But use the same approach for keto cakes as you would for regular cakes.

Glad it helps. Grab yourself an oven thermometer too... the kind that stays in the oven. It's super useful and not very expensive!

Bet you're not using one that's finely ground. Many SAY they are finely ground, but they are not. what brand?
I’ve started replacing 100g of almond flour with 100g of almond butter. Works much better for me-not so much almond grounds caught in my throat.
