You forgot about the hidden mid-bosses throughout the game! There's a Bonkers if you enter the moon in Spring Breeze stage 3, there is a duo of mini bosses if you enter the clouds before you go underneath the Halberd in Revenge of Meta Knights, there is a hidden Poppy Bros. Sr in the door maze on the wind planet in Milky Way Wishes, there's a hidden Wheelie boss if you enter the moon in Revenge of the King, and also in Revenge of the King there's a hidden Phan Phan in the HAL Room!
There's also a Jukid in the basement of the Old Tower in Great Cave Offensive that you missed as well, and a Poppy Bros Sr in the Crystal area of GCO as well, in the left door. And finally, there's a Bugzzy in the right door of the Garden area of GCO.
This is all off the top of my head, so if I find anymore I'll update this list. And if anyone beats me to it, reply what else was missed!

At the very beginning of the Kracko's revenge boss fight, when he absorbs the waddle doo, he gets hit by Kracko's rotating beam attack but it does no damage. There's a frame where the particles for Kirby's damage block appear when he's hit.

Marx/Marx Soul are my favorite bosses and characters (Other than Kirby) and I always thought his wings were replacements for arms since he didn’t have any.. I was also on 1HP against Marx Soul and so was he.. I took a risk, jumped into the air as an attempt to hit him. And I won. He screamed.. I wasn’t terrified. I had no reaction to both winning or his screaming. I just sat there thinking about how I beat him with 1HP.. I thank my mom for buying me this game as a start for Kirby. I then lost it a lone time ago and moved to another house. I will never forget this game. The NintendoDSi.. my first Nintendo Device.

You missed a mid boss encounter in Revenge of Meta Knight!
After defeating Heavy Lobster you should see a cloud with four food items nearby. If you press up on that cloud you will be transported into a hidden room and that hidden room has a mid boss encounter in which you fight Chef Kawasaki and Bugzzy at the same time.
