As a Viewer of your channel for some time now, I like the fact that you moved back to your family and being 1 on 1 with them while building the race truck. Definitely would love to see your kids make some light pulls in the truck one day so they can experience the thrill that these trucks make us all have. One of the advantages of being in SoCal is you are surrounded by off-road racers and fabricators. They have decades of experience mounting fiberglass panels. Autofab in Ramona sells nice polyurethane fender washers that allow you to bolt the fenders on, and the tabs to bolt them to. Kartek in Corona will also have anything you need.

Next video proof of concept test drive. Looks grate sitting still. The ears you cut off to end of the " overshoot " can be flattened and turned to gusset triangles to keep the back bars where you put em.
