Nice job on the portals. I've found if you mix PVA glue and water with the plaster, the end result is a lot less brittle.

Here is another idea - -
Begin with a tunnel portal template, either out of extruded foam or a wood shape.
Line this on all sides with plastic wrap from the kitchen.
I then use my cross cut paper shredder and shred up a ton of newspaper into small pieces, and throw it all into a bucket with warm water. This becomes paper mache.
I squeeze on the mache on all sides of the tunnel form and allow to dry . The mache is quite brittle so you can add a flour paste/salt mixture to the mache and it will become firm.
The plastic wrap allows for the release agent when drived.
Remove the plastic wrap and pour in your plaster and allow to dry.
I believe this is a destructive process and now peel away the mache, exposing the profile.
You have a rock formation on all surfaces of the portal.
