- I used 4 pounds of sliced pork shoulder
3/4 cup kosher salted (0r curing salt )
10 bay leaves
25 pimento seeds or all spice berries crushed
20 whole black pepper seeds crushed
10 cloves( optional)
Slice onion(optional)
Or you can use only salt.
Ok my Jamaican gem from now on I will salt my mackerel myself thank for sharing

Can i also leave the mackerel out on the countertop or does it have to go in the fridge after salting?
Yes you can as long as it well salted . But I don’t , I feel more comfortable with it in the fridge.
