I like that you did not over-spice or pour a bunch of salt in and let the vegetables/Chiles speak for themselves. I prefer to make mine thick enough so it can go inside the burrito on it's own.
Tip for making the chile better use Manteca de puerco. It was used to not only fry the meat but to flavor the salsa. Oil is bad. It has been hydrogenated.
Yessss. Exactly i use 1 Green Poblano chile, 1 Anaheim. 3 Güero chiles or yellow chiles, 5 serrano and 4 Jalapeños 4 garlic and a piece of onion. This is jalisco style. You could add 3 tomatillos for texture. But it wont make your salsa bitter. Less tomatillos more chiles
And trust me some of us do. My Pueblo is the place to go for true chile con carne. And for the red kind we use the tomatoes instead of tomatillos and no poblanos😊

My mom has made this for us my whole life. The only difference she fries pork in flour. Cuts it into bite size and back in the pot. Spoon good!
