Hello @BTNHD can you please tell me what are your specifications? Your VM are very fluid, and you use two of them at the same time. I tried the same thing, but the lag was constantly presented. My spec are:
Ram: 8gb
Win: 8.1
Geforce 740M
Processor: 2,50Ghz
Is it enough for running two or more VM at the same time?

You need to break the partnership using remove-SRpartnership cmdlet and then the volume will be mounted on the destination server ready to be used with all the replicated data.

Great video. What would be a good prod based used of storage replicas? Its different from DFS and HyperV replicas. Can both E:\ drives be accessed or was it just on StorageRep1 ?

DFS is file based replication ,however Storage replica is block based replication . You can access E drive in both server. The general purpose of storage replica is on File server . It is very depends on the scenario and situation with adopting DFS or Storage Replica in environment

I did not understand the reason of the disk for the logs to have the same size for the file disks. Could you tell me why?
Another detail! I have an ad in my network with file server. I want to sync with another AD with Fileserver in the Azure Cloud. How could I accomplish the replica storage there ??? And how will users access the data in the cloud?

The disk for the logs should be at least 8GB as per microsoft documentation. You can keep it 20-50 GB considering the usage.
Make sure that your on premises file server is connected via VPN to the Azure file server. Then you should be able to do the same as they both will be able to connect to one other.

It looks like you fubar'd your replicated disk (E: on Replica 2) when you completed the configuration.

You can configure another set of SR partnership with setting server 2 as source and server 1 as destination
