Nice resto mod! Still modern, faster, different. Suggest a over hub Spinelli type prop. That will help with chine walk. Chine walk on yours is due to higher stern drive transoms mounting, speed master, adding the through hub dynamics. That through hub is extending the sport master water dynamics too far aft on the drive. These hulls are stable. And have plenty of aft lift. Do not need more from the drive/through hub prop… work the ears of the Spinelli or like over hub prop to match any need of lift (bow or stern). The ears (blades) will have more actual surface area, more bite, more stability for this stepped deep V.
I had a buddy with one of these back in those days. Did not have access to the HP available today. We would race this with my boat. In rough water he had the edge. Smooth my 2.5EFI offshore based platform was faster.

Nice job, accept the trim tabs are mounted incorrectly. The tabs are to follow the flow of the bottom and be mounted 1/2 inch up.

To each is own this set up helps with bow lift instead of side to side. Those tabs would are huge. Would be dangerous to mount traditionally
