Hi Dima. I have tips because you love it so much: If you have a sugbahan (a roasting pit) you can roast the eggplants over coals as well. In our home, we boil the eggplants in water to soften them. Roasting burns the eggplant skin that's why you need to remove them. With boiling, we skip that step. But softening the eggplants in fire adds a smoked flavor that's why most people prefer that. Those eggplants look very tasty. Great work everyone. :)

The more you beat the egg and vegetable mixture, the more watery it will be. Don’t overbeat eggs. We also like to sautee some gound beef with garlic and onions and use this as filling for the roasted eggplants.

I don’t know how your mum cooks that way and it’s easy for her to learn Filipino way of cooking, that really amazed me.
Your version of tortang talong is healthier than ours because you keep the veggies almost raw...also using just a tiny amount of cooking oil and salt😊❤👌
