How to Make Eggnog Cupcakes | The Scran Line

- These charming vanilla eggnog cupcakes are made with real eggnog. The perfect way to get festive for the holiday season!

INGREDIENTS
429g (2 1/2 cups) all-purpose flour
3 tsp baking powder
265g (1 1/4 cups) caster (superfine) sugar
1/2 tsp salt
375ml (1 1/2 cups) of eggnog
125ml vegetable oil
125g butter
2 tbsp Greek yogurt (can substitute with sour cream)
1 tsp vanilla extract
2 large eggs
1 tbsp cinnamon (for frosting)
100g white cooking chocolate (melted)
1 batch of fluffy vanilla buttercream frosting
RECIPE
Preheat your oven to 180C (356F) or 160C (320F) for a fan forced oven.
In the bowl of a stand mixer fitted with the paddle attachment, combine the dry ingredients. Turn mixer on low and allow it to mix for a couple minutes. Add the softened butter and let it mix until it resembles a fine sand like texture.
Next combine all eggnog, eggs, yogurt, oil and vanilla extract in a large jug and whisk well.
Add wet ingredients to dry ingredients in a slow and steady stream until no dry ingredients are visible. Scrape down the bowl and mix for another 20 seconds.
Fill each paper 3/4 of the way (using an ice cream scoop to transfer the batter into the cupcake liners makes this a quick and easy process otherwise you can use two tablespoons). Bake for 20-25 min or until a toothpick inserted comes out clean. Allow them to cool completely on a cooling rack before frosting.
While your cupcakes are baking and cooling prepare your frosting by adding cinnamon and mix in well.
To prepare your white choc snowflakes simply melt your chocolate in a microwave safe bowl for 20 seconds at a time, mixing each time until smooth. Place in a zip lock bag or a piping bag and cut a small bit off the tip.
Pipe your snowflakes onto a baking tray lined with baking paper and place in the fridge for ten min to set.
To frost your cupcakes fit the end of a piping bag with a round tip and pipe in a swirl. Dust with some cinnamon before placing your white chocolate snowflake on the front.

You can't call it margarine in the ingredient list and then call it butter when mixing. They are not the same thing, as you know.
