Thank you for the suggestion- great point! I have canned whole tomatoes but for this demonstration we didn’t have wide mouth jars and couldn’t fit them in.
A lot of canners will cut off imperfect parts and can them with no problems, I have. But our canning expert in this demo recommends not doing that for safety reasons, especially if part of the tomato is rotting. But if you have some zippering on healthy tomatoes, it is fine to slice it out and can it. Otherwise, eat the imperfects fresh and save the best ones for canning.
