People from philly can be a pain about their cheese steaks. An original involves thinly sliced rib eye and cheese whiz. But I love it when people put their own spin on it. This looks delicious
Sliced green bell pepper, 1/2 cup red bell pepper, 1 tb. Butter, 1/8 cup of red wine, 1/8 cup of beef broth, s/p, 2 garlic cloves. Remove veggies ( leave a little crunch to peppers) and strain au just for dipping! Now toast Italian sub roll, add light spread of dukes mayo, meat/onion mix, veggies, drizzle of red wine au jus, layer 4 slices of provolone cheese and broil on lower rack till cheese melts! Add bread and butter pickles to mine!
I'm usually a big fan for your recipes and even more of your enthusiasm, but, so many things wrong with this one man. 1. That's no way to cook a steak. The water from the onions and mushrooms will make it boil and grey instead of that nice sear on the meat. Also sear the meat first, then while it rests, cook the onions and mushrooms in the same pan so the water from them deglazes the pan as well as soaks in those meat flavors. 2. You said cut against the grain but cut with it. Ideally for the skirt steak, cut at an angle. 3. Skirt needs some help and is best if marinated overnight to tenderize. 4. You forgot the mayo in the beginning so tried adding it in the end by lifting the steak. Good improv for the camera. :P
Ok I just read some of the other comments and I realize that you were tired at the end of a a long shoot and had a brain fart when you cut with the grain. That's an honest mistake as are the others. #1 however is still just wrong technique. :(

I'm so glad I watched this video. I just made Philly cheesesteak for the first time, and most recipes suggest ribeye for the meat. I tried both ribeye and skirt to compare, and we all thought the skirt steak was a lot more flavorful than the ribeye. You saved me from a bland sandwich!

I thought the 90° angle shortens the grains so a thin slice of meat has only very short fibres. Am I wrong? Please excuse me, I don't eat steak every day (in fact, hardly ever). Looks good, but I wouldn't call it a "Classic Philly." A Philly is Steak and Cheese and Onions. No Mushroooms, No Bell Peppers, No Tomato, No Lettuce, No Mayo. Not that you can't put those on the sandwich if you like them. But it's not a "Classic Philly" at that point.
