Sai krok Esan is a fermented sausage originating from northeastern provinces of Thailand. It is made with pork and rice, and typically eaten as a snack served with bird's eye chilis, raw cabbage, and sliced ginger. Sometimes the sausage is served and eaten with sticky rice and comes in a wraped form and a sliced form.

There are a few different kinds of this type of Thai sausage. Some have rice in it. Others just meat and you also can find it with glass noodles. But all of them have main ingredients which are garlic and rice. After being made and hanged to dry in a hot and humid weather. The fermentation is started in order to preserve the food. So, the sourness came from this stage, fermentation
It is as others have commented. It's fermented pork hence the sour flavor. Isan sausages are not usually eaten with any sauces. It is usually accompanied with fresh cabbage, sliced fresh ginger, roasted peanuts, and Thai chili peppers.
I love guava in SE asia. I’d only ever had the juice before (which is from the pink guava + super sweet like nectar. Eating fresh green guava in asia, they eat it less ripe so it’s crunchy like a pear but with subtle guava taste. Apparently one of the top foods for vit c, so watch for this one cut up on the street 👌👌

during the lockdown, Mark Wiens was only filming in Thailand, and many places were semi opened, that said, it might have influenced the changes to openess for streer businesses and financial recovery, Thailamd is one of the poorest countries in the world. street vendors have to make out for the losses.
Thailand actually isn't one of the poorest in the world, I can tell you right now we sat in immigration on Tuesday for 9.5 hours and about 700 people went through to extend their visa which made them around $37,700 in one day in just that department. Thailand is not on the list even in Asia, Cambodia and Myanmar are
@randallruiz3882 there is a lot of poverty much like most countries, Canada is getting just as bad. I would say Costa Rica is much poorer than Thailand

Not all of the food in Costa Rica is organic and clean unfortunately. And it's only a small region of Costa Rica that is in a blue zone, not the entire country.

Esan sausage we eat with fresh chili ,cabbage ,ginger or pickled Ginger It depends on the shop . Recommend with beer 🍺
