This made me a fan of Remi. I’ve been a cook for over twenty years and just jaded with most of the pop chef culture. So it was nice to hear a conversation that wasn’t pompous about the art but got across the dedication and skill put in. Thanks for making me aware of him.
I love his take on restaurants. I worked a few years in a restaurant and it was brutal. Long hours, hot kitchen, worked many many shifts with zero breaks, and all for near minimum wage. I loved the people I worked with, the job gave me a love for cooking, but I don't ever want to work in a kitchen ever again. Without a doubt the most stressful job I've ever had.
As a home chef with a wheat/gluten allergy, this was the best pod yet! It sucks when people don’t understand why eating out is a struggle. Appreciate all those chefs that put GF on the menu items without having to make a scene. 👍
I love how much Daniel appreciates and knows about French cuisine institutions!! 10/10 podcast. Remi is a legend. As a young French Trained Line cook it's so nice to hear someone like Remi so happy and content even with all the bullshit that comes with the job. Merci Beaucoup Chef Remi and Daniel!!!
Cooking isnt about step by step directions. Its about trying a recipe over and over and making your improvements and making it yours. Cooking is also about sharing love through food
I'm pretty sure I could watch Tosh just pull randos off the street and it would still be a top tier podcast. Love the variety and diversity of his guests, lotta fun and you can tell they are happy to be there, not just pushing their next new thing.
