What I found on some warped and twisted oak slabs was that if I cut the project boards just a bit long and then plane them I lost less material than doing the whole slab. Great video and beautiful boards. I’m getting some incense cedar slabs soon. Hope my boards turn out with that much color
With aromatic cedar you should be wearing a respirator to avoid the particles that working with cedar produces

Those planks came from a tree that has been down for more than a year.

If you're looking for something simple and easy I would recommend that you look into Walrus Oil. And look for the cutting board wax
