Chocolate and salted caramel tart with caramelized hazelnuts

- This week's recipe is for all the chocolate lovers and all the people who really have a sweet tooth (I see you!). We're making a chocolate and salted caramel tart, with the texture of a twix or a snikers...
I'm making it with a chocolate shortcrust pastry, a 70% chocolate ganache and a soft salted caramel that melts in the mouth and gives a nice kick at the end! The decoration also serves a purpose here, the caramelized nuts brings another flavor and a bit of crunchiness. I love the balance of sweet and salty here, its really what makes you want moe of this dessert.

Here are the ingredients:
Shortcrust pastry:
250g flour
150g butter
1 egg
60g almond flour
30g cocoa powder
90g icing sugar
a bit of salt
Chocolate Ganache:
200g chocolate (70% or more)
200g cream
Salted caramel:
250g cream
250g sugar
25g butter
8g salt
How to make it?
1. Prepare the dough - In the mixer, work the butter and the sugar until you get a cream. Add the egg. Then the dry ingredients: flour, almonds, cocoa powder and salt.
2. Roll the dough to a 2-3mm thickness and put in the mold.
3. Bake the dough 25 min at 165°C.
4. Make the salted caramel - Start by making a dark caramel with the sugar and a bit of water. Then turn off the heat and ad the cream. Cook for another 3min. Turn the heat off again and egg the butter and the salt.
5. Pour on the baked dough and place in the fridge.
6. Prepare the chocolat ganache. Heat the cream, pour it on the chocolate and mix.
7. Add the ganache on the caramel layer.
8. Decorate with nuts and all that you like (I used sugared and caramelized hazelnuts, almonds, chocolate candies and pieces of 99% dark chocolate)
9. Pop into the fridge for everything t get firm.
