Training at full speed with as close to as full contact as is safe (use safety gear& trainers) will show the reality. Afterwards you will see just how "good" your skills are. After that reality check sign up for Craig's ShivWorks ECQC course & be ready to learn a thing or three!
The "nice" think about knife training is that you're relatively safe with a practice knife. With some eye protection, welding or hockey gloves, and basic rules not to maim or break, it is easy to practice with a partner at speed and not get more than bruised up. Basic techniques need to be on automatic. That takes practice to develop muscle memory or myelinate the actions (i.e., build neural pathways). A step up is to use rattan practice weapons (potentially with a foam-covered poky end), padded armor, and a helmet. This opens the range of fast trap, deflect, counter techniques that can't be executed with a rubber knife.
The more we sweat in training the less we bleed in battle. Also train as if your already dead this mind set will allow one to put forth effort to truly endure any encounter with a person who means you real harm. Fight like your dead, not play dead. That doesn't work.
What do you think of HEMA Dagger-Fighting? I started to practice, showed my skills to a german ex-Seargent (Oberfeldwebel) and he was really frightened. Considering a almost 2 meter tall man with a dagger raised over his head in front of you. Ready to push a special designed blade (Rondel Dagger) in your neck. So what do you think? It is a waste of time or still practical?

Only thing is, I buy body armor, I have an AR (well technically my dads because of obvious reasons), what do you think about someone like me training, and what courses can you do. Because I want to be as efficient as I can with my rifle and equipment.
One thing to remember is that if the person with the knife has friends, they will try and hold you down or immobilize you so the job gets done fast. Another thing to remember is that some people will dirty up the knife so even if it is not a serious injury it can still do alot of damage.
