When the sugar starts crystallizing again but it's still thick, gather it at the center of the pot and overturn the pot on a large paper it will stick together let it cool off. Use your knife to break it to desired sizes. Note that when the sugar starts crystallizing and you keep stirring it will come out in grain form and will not stick together and at that stage of the heat is much it will melt again and caramelize with dark brown colour like burnt sugar
