Great video, I just had a new smoker built that wants to run hotter than any that I built before and was a little concerned about it. but not anymore. This new smoker is 36" by 48" chamber so a little bigger than I was used to.
Wow, outstanding information! I'm in Ohio, and smoked a 10lb brisket yesterday with hickory. I looked for post oak, wanting to make an 'authentic' TX brisket, but here in the Midwest hickory wood is king. Honestly I didn't stress over it, and my brisket was still awesome..
My camera does record in 4K, but with a runtime of over 50 minutes, the file size tends to be rather large, even if I export in h.264. Thanks for the input and I’m glad you enjoyed the video.
